Here is the current setup at our church:
2 - Canon XL-H1 cameras
connected via RG6 into:
Edirol V440HD switcher
PC running MediaShout connected via VGA into the same switcher
Edirol switcher output via VGA into 1x8 VGA multiplexor
1x8 Multiplexor runs VGA to:
A second computer for video archival and
3 EIKI LC-XG250 Projectors (through VGA to 5-wire component cables)

My goal is to swap the Edirol V440HD with a new TVS switcher and replace as little other equipment as possible in order to improve the video quality from our cameras since they are currently only SD coming into the Edirol switcher.
On the inputs side:
I understand the Canon XL-H1 cameras have the capability to run HD out of their SDI outputs. Since we already have RG6 cables connecting the cameras to the switcher, I should be able to connect the cameras directly into the TVS via SDI without issue (aside from possibly configuring the HD output setting of the cameras).
The PC running MediaShout is connected via VGA. I understand the video setting would need to match the cameras' video resolution, so the simplest approach would be to buy a new HDMI video card for the PC and run it directly into the TVS.
On the outputs side:
I'd like to keep the 1x8 VGA multiplexor in place since it's already connected to everything. Since it is running VGA to 5-wire component cables to the projectors, I should be running analog HD already, right? What equipment would you recommend using to connect the output of the TVS to the VGA multiplexor? I understand there could be an issue with the TVS outputting YUV color space and the projectors expecting RGB.
Are my assumptions and understanding correct for both the inputs and outputs? If so, what recommendations would you have for the output conversion to VGA?
